Spicy Courgette and Broccoli Soup

Thai is A real comforter and definitely one of my favourite home made soups, its so quick and simple to do, with minimal ingredients or fuss. Note that this soup, as with most, is without protein so if you’re having this as a meal do be sure to add some protein on the side. I like this as a starter or side dish :-)

What you’ll need (serves 1):

  • 1 whole courgette
  • 1 large garlic clove
  • 1/2 a small red onion
  • 1 small red chilli
  • A couple of pinches of pink Himalayan sea salt
  • Vegetable stock (preferably Kallo or Marigold brands)
  • Coconut oil or olive oil for sautéing

What to do:

  • Coarsely chop the garlic, onion, chilli and courgette
  • Add some oil to a pan on a low to medium heat
  • Add the garlic and onion to the pan and gently saute for about 3 minutes
  • Add the courgette and chilli
  • Stir and sauce for a further few minutes then add to a blender or food processor and blend
  • Serve and enjoy!
